Want to bring a little Pacific flair home with you? I was able to get the recipe for Mango Pancakes with Orange-Ginger-Mint Maple Syrup!
Mango Pancakes
2 ½ cups flour
3 ½ teaspoons vanilla
2 eggs
1 Tablespoon + 1 teaspoon butter
1 ¼ cups milk
¾ teaspoon baking powder
½ Tablespoon agave nectar (or more to taste)
Diced fresh mango
In a large bowl, combine the flour, butter, baking powder and agave nectar. Mix well until incorporated. Add eggs and stir to combine. Add vanilla and milk. Mix thoroughly until smooth with no lumps. Cook on the griddle, about ¼ cup of batter per pancake. Top finished pancakes with fresh mango and Orange-Ginger-Mint Maple Syrup (recipe below).
Orange-Ginger-Mint Maple Syrup
½ cup orange juice
1 teaspoon minced fresh ginger
1 teaspoon chopped fresh mint
1 ½ cups maple syrup
In a small saucepan, simmer the orange juice with the fresh ginger for 5 minutes. Add the syrup and simmer for 2-3 minutes. Remove from heat and add the fresh mint. Let cool and serve.
Sounds yummy, right? It is delicious, and perfect for a taste of vacation on any morning. I think I might whip up a batch this week...
