Let’s be honest; the number one thing you look for in a vacation is fun, but a close second? Food. So we thought it would be worth looking at a few of our favorite resorts—Live Aqua Cancun, Fiesta Americana and The Explorean—from a culinary perspective.

In a previous post about Live Aqua Cancun, we mentioned Hidden Garden, the resort’s unique Asian fusion restaurant. The other dining options here are equally adventurous. Azur takes classic Mediterranean dishes like chicken Caesar salad and serves them up in avant-garde style (rolled up in a flour tortilla and topped with “dressing spheres”—little bubbles of salad dressing you can “pop” with your fork). Meanwhile, Mexican pop culture decorates the walls of Siete and items like pumpkin-flower quesadillas decorate its menu.

And we’ve also already written about one of the most unique features at The Explorean Cozumel: its restaurant, where everything is made to order. Sit down and tell the chef what you’re hungry for, and you’ve got it. If breakfast buffets have lost their glamour for you, it’s a welcome change.

Of course, a lot of us look forward to not having to make decisions while we’re on vacation. So the all-inclusive package at The Explorean also includes the seven restaurants at the Fiesta Americana Cozumel next door. There, we (and a lot of happy TripAdvisor reviewers) would recommend La Cevicheria. A staple of Fiesta Americana’s all-inclusive resorts, this poolside spot serves authentic ceviche and legendary fish tacos.

La Cevicheria is just one example Fiesta Americana’s specialty: authentic Mexican cuisine. In their buffet restaurants, you’ll find warm, hand-made tortillas. Fiesta Americana Condesa Cancun’s El Mexicano serves regional dishes from throughout the country, makes its guacamole fresh tableside and projects silent black and while films overhead. At Grand Fiesta Americana Puerto Vallarta, a casual dinner on the patio of the Fajita House is elevated by a beautiful view of Banderas Bay while sunlight filters through the palm trees.

Things get a lot more upscale at the two Grand Fiesta Americana resorts in Los Cabos and Cancun.

Baja California is Mexico’s wine country as well as a prime vacation spot, so it only makes sense that the Grand Fiesta Americana Los Cabos boasts an excellent wine list. But the most notable culinary feature here is the “vinotherapy” offered by the spa. The SOMMA WineSPA uses fine wine in unique ways, from champagne mud wraps to chardonnay sugar facials.

Back in Cancun, Grand Fiesta Americana Coral Beach is home Le Basilic, widely considered one of the area’s best restaurants. Chef Henri Charvet’s French-Mediterranean cuisine has earned the restaurant a AAA Five Diamond award. Dishes like foie gras and truffle ravioli and king crab-stuffed piquillo peppers are accompanied by not only by live jazz, but with live art—painter Leon Alva maintains a gallery and studio space at the restaurant.
