There’s something about warm weather and watermelons. We’ve gathered our favorite watermelon recipes for National Watermelon Day.
Watermelon Blueberry Feta Salad – perfect for almuerzo.
This sweet and refreshing salad is a great side for any lunch. No guilt here.
Total time: 10 minutes | Serves: 4 | Good for about 3 days
Ingredients
½ watermelon cubed (8-10 cups)
1 cup blueberries
¼ cup crumbled feta
2 tablespoons of chopped basil or mint, whichever you like best
Dressing
2 limes worth of juice
-or-
Recommended for extra sweetness
1 lime worth of juice
1 tablespoon of honey
Dash of salt
Instructions
Combine the prepped fruit, mint/basil, and feta in a large bowl.
Toss the dressing in.
Watermelon and Basil Iced Tea – a hot day sipper.
Ingredients
8 cups of boiling water
8 tea bags
1/8 medium size watermelon, cubed
1 small bunch of fresh basil sprigs
Sugar to taste if desired
Directions
Boil 8 cups of water then add 8 tea bags and steep for 10 minutes.
Remove and toss the tea bags and let it cool to room temperature.
Refrigerate until you’re ready to serve.
Add watermelon cubes and basil once served.
Sweet + Salty + Spicy Watermelon Refresher – a side dish.

Ingredients
¼ c. fresh lime juice
1 tbsp. turbinado sugar
2 tbsp. fresh orange juice
1 jalapeno, seeded and minced
1/ tsp. sea or kosher salt
¼ tsp. crushed red pepper
1 small red onion, diced
½ cup coarsely chopped cilantro
2 tbsp. coarsely chopped fresh mint
1 small seedless watermelon
1 small cantelope
2 English cucumbers
1 jicama
2 mangoes
Directions
Combine lime juice and next five ingredients.
Place red onion, cilantro & mint in a large bowl.
Dice watermelon & cantaloupe into 1” pieces; add to bowl.
Stir in lime juice mixture. Cover and chill 20 min.
Add salt and pepper to taste. Serve.
La Sandía Fresca – a muy refreshing cocktail.
Ingredients
30 large, fresh mint leaves, coarsely torn by hand
Springs of mint leaves and watermelon spears for serving garnish
3-4 thick slices fresh watermelon
Generous ½ c. of mint simple syrup (1 part water, 1 part sugar, boil until sugar dissolves)
6 tbsp. freshly squeezed limes juice (3 limes)
12 oz. good vodka, like Ketel One
Directions
De-seed and remove rind from watermelon slices, puree in food processor. Combine mint simple syrup, watermelon puree, vodka, and lime juice in a large pitcher. Serve over ice with mint leaves & watermelon spears.
